Stuffed Roasted Butternut with Tuna & Bacon

 


Butternut is one of my favourite vegetables to make, because it truly is so versatile. From a humble side dish to and extravagant salad or an all in one meal, Butternut does it all! 

In South Africa it is one of our staple vegetables and can be bought in bulk often along with a combination of other vegetables like  peppers, tomatoes, onions and potatoes for under a  R100! 

It is a budget hidden gem when combined with a bit of creativity.

This stuffed Butternut recipe is perfect to clear out the last of the month goodies in the fridge or for a  pay day feast! You can completely leave out the meat or even replace the Tuna with Chicken, the combinations are endless. I have a picky 12 year old, especially when it comes to vegetables, so this is another great way to hide the veggies. More to follow soon!

Lastly a little tip when preparing Butternut. Pop the whole Butternut in the microwave for one minute. This softens the skin, making it easer to cut or peel.
