Cowboy dinner or as it has come to be known in our household as Oupa se Cowboy kos, (Grandad's Cowboy food) is a childhood dish that my dad use to make with great excitement for us.
It was not necessarily a favourite meal of mine but it holds beautiful memories. I will never forget the excitement in my dad's voice whenever he was making us Cowboy Kos (food) for dinner. There was always some added adventure story to the meal that involved 'real' Cowboys so you could not help but love it.
It is a simple hearty meal that my children have come to love more so because it is not just a Cowboy Dinner but it is Oupa's Cowboy kos.
The recipe is quick and easy and whilst there is lots of room to add some flair, it is one of those recipes that as long as you have some Mince (Ground Beef) and a can of Baked Beans you are good to go.
I usually double the recipe and then stretch it over 2 meals, first serving it with rice and then adding some curry to the leftover mince and serving it in wraps.
I also like to convert any leftover Spaghetti Bolognese mince into a Cowboy Dinner by simply adding a can of Baked Beans. Stretching those leftovers and converting them into more servings.
I love adding my own bit of culinary art to any dish but there is a reason this recipe is called Cowboy Dinner and not Beef & Beans delight or something more cuisine like. So keep it simple and add a few memories instead.
