Chicken Tomato Bredie (Slow Cooked)

My Slow Cooker works overtime during winter with hearty stews, curries and soups.

The smell of a delicious meal, slowly simmering away, wafting through the house and the reaction of the kidz when they get home from a long day at school, makes it so worthwhile.

I have always associated Tomato Bredie ( a typical SA stew) with red meat but this chicken variation has become a much loved preference in our little family.

I like to layer my slow cooker starting with the potatoes, followed by the browned meat which is then covered  with the delicious tangy sauce. Lastly, topping the stew off with a variety of veggies. After 3 hours on high setting I stir the stew and then let it continue on slow till ready to serve. 

Potatoes, Tomatoes, Peppers, Carrots, Baby Marrow, Green Beans, all in one delicious dish is a winner for this mom!

The dish can easily be turned into  a curry by adding your favourite curry spices and a can of coconut cream to the tangy sauce. I use the sauce as a base for several dishes, from bolognese to stews and curries, thereby saving on my grocery haul.

Most of our stores have some form of bulk vegetable combo specials. These are great if you are able to use up everything in a variety of dishes. A special is no longer a saving if food goes to waste. 

A large meal such as this one makes up about 10-12 servings for our family, plenty enough for leftovers and even enough to freeze for those crazy busy days.
